Without BASIC knowledge and skills the food operations manager has more responsibility to oversee the minute by minute work of all employees, which detracts from his/her ability to function as management. Safety is another issue for employees who lack ABE levels, can they read and follow directions, not only using cooking equipment, but reading and measuring safe amounts of each ingredient can be crucial.

Yes, it is 7 years...but sometimes it can be done in 6. Like most other allied health professions (such as OT, speech language pathology, physician assistant, audiologist), it's a graduate level degree. You need to take all the general education and prerequisite courses first and then apply to grad school. It's no different than someone who wants to go to medical school. You spend the first four years getting your basic science, and then apply to the appropriate program.
